Last night I got a little crazy and decided to make homemade egg rolls, duck sauce and won ton soup. Yum!
Egg Roll Recipe:
1 pound chopped pork
3 cups shredded white cabbage
1 cup shredded red cabbage
1 large carrot, shredded
1/2 green bell pepper, cut into thin strips
1 medium onion, chopped
3 cloves garlic, minced
3 teaspoons fresh ginger root, grated
1 tablespoon cornstarch
2 tablespoons soy sauce
1 1/2 tablespoons molasses
dash of sesame oil
1 1/2 (14 ounce) packages egg roll wrappers
1. Brown your chopped pork with salt and pepper, set aside.
2. Mix all your vegetables together and cook slightly in a pan (about three minutes) with sesame oil. I had to do this in batches--lots of veggies!
3. Mix your meat and vegetables well in a large bowl.
4. In a separate bowl, blend cornstarch, soy sauce and molasses together; toss into veggie and meat mixture.
5. Put in egg roll wrappers and spritz with cooking spray then place on greased baking sheet.
6. Bake at about 375-400 for 15 mins or until golden.
Duck Sauce:
1/2 peach, chopped
1 cup water (maybe a little less)
3/4 cup orange juice (or apple)
1/2 brown sugar
1 teaspoon soy sauce
dash garlic powder
dash mustard powder
maybe some other stuff i can't remember! sorry!
1. Mix all together in saucepan and cook until reduced to duck sauce consistency.
2. Pour in food processor and blend to desired consistency.
Won Ton Soup:
6 cups water
6 bullion cubes
2 inch piece of ginger
1 teaspoon grated ginger
2 tablespoons soy sauce (or to taste)
1 large egg roll wrapper
2 chopped green onions
1. Boil water, bullion cubes, piece of ginger, grated ginger and soy sauce.
2. Taste and adjust soy sauce, water etc. Remove ginger if too gingery.
3. Cut the egg roll wrapper into 16 little squares, take each piece and pinch into little flower shape. Drop into boiling soup.
4. Add chopped green onions and serve!
2 chopped green onions
